basil pesto

Next week I'll be heading back home to Vancouver and one of the things I'm most looking forward to is my full-equipped kitchen. Oh how I've missed it! And you know what else I've been missing? Sandwiches, really good sandwiches. I'm not one for spreading the usual butter, mustard or mayo onto my sandwich. I much prefer pesto, and better yet, homemade pesto made from fresh basil leaves. Here is a recipe from the Barefoot Contessa that has become a staple in my sandwich needs.

      {I like using Bonne Maman jars to store the pesto}

    {nothing's better than fresh basil leaves}

       {walnuts and pine nuts add an earthy flavour}

   {freshly grated parmesan cheese is a must}


Pesto is the perfect spread for sandwiches. It's also a great substitute for tomato sauce on pizzas!
