
Along with the beet chips from my last post, these yam fries became an excellent distraction from studying for exams last week. The recipe comes from Sarah from My New Roots, one of my absolute favourite food blogs. The only changes I made to her recipe were that I used yams instead of sweet potatoes and olive oil instead of coconut oil or ghee. And I added some freshly ground pepper to the cornmeal and salt. For the dip I kind of just made it up as I went along but basically I mixed together 3/4 cup sour cream, 1/4 cup chopped cilantro, 1 clove garlic minced, 1 lime (zest and juice), 1/4 tsp. cumin and a pinch of salt. These are estimates as I just kept adding more until it tasted good. And because I love cilantro I tossed some with the fries once they were baked.
